Nutritional Yeast is a wonderfully nutty, slightly cheesey tasting all natural condiment!

Lovingly nicknamed “nooch” by the plant-based crowd, who benefit greatly from it’s high levels of B vitamins, this yeast is not an activated yeast. It is grown specifically for its nutritional properties.

It is a complete protein, as it contains all the amino acids (also called the building blocks of life).

You can sprinkle it as is on anything that you’d like to give a cheesey punch of flavor, be it pasta, a salad, grains or vegetables. But our cook’s favorite use for nooch is to blend with non dairy cheezy sauces. Here is a recipe for her signature cheezy sauce for kale chips:

  • 1 red pepper
  • 1 cup of raw cashews, soaked overnight
  • juice of 1/2 a lemon
  • 1/4 cup nutritional yeast
  • 1/2 tsp sea salt or to taste

Blend all ingredients in a high powered blender or food processor. You will get a bright orange sauce. Pour over a bowl of washed and dried kale leaves, using hands to coat kale. Spread kale in a single layer onto oil sprayed baking sheets and bake at 375* for 20 minutes, or until kale leaves are crispy. Enjoy! You could also use a cheezy sauce such as this to dip chips or raw veggies in for a snack. Experiment with spices and flavors, have fun!
